Lemon Coconut Chia Pudding Recipe


Hey guys, 

I don't know about you, but I loooooooove good for you food that tastes ahhhhhhhmazing!!! You know, the kind of food that makes you forget about chocolate cake or cinnamon rolls or peanut butter cookies.  

One of my favorite go~to recipes for a healthy breakfast or dessert is chia pudding.  It comes together super fast and it is loaded with superior nutrition that will serve your body well as we try not to eat "all the things" in site during quarantine. 

This particular variation combines lemon, coconut and fresh berries. It's sooooooo gooooood, and a great swap when you feel like something sweet. It's super versatile too. Ingredients

  • 1 TBSP coconut oil
  • 2 1/2 cups unsweetened original almond/coconut  milk
  • 3 tablespoons pure maple syrup or monk fruit sweetener
  • 1/2 cup chia seeds
  • 1/2 cup lemon juice freshly squeezed
  • 2 teaspoons lemon zest
  • 1 tsp vanilla

Directions:

Blend everything together and pour in ramekins or martini glasses. Cover with foil and let sit for about 4 hours. Top with fresh berries, mango, kiwi  and flaked coconut. (Anything with beautiful color just makes it look more amazing.)
