The Best Green Salsa Evaaaa!!

 


If  you could pick a food that checks all the boxes for you, what would it be????

My cravings are usually for salty/sour foods. I love lime, garlic, jalapeño and cilantro. So, when Walt and I went to Superica on  a date a couple weeks ago, I was thrilled when they brought out their complimentary avocado salsa. 

First, if you live in the Atlanta area, it’s 100% worth the drive and the wait to get a table there. Walt and I usually share the steak tacos or fajitas and always bring home leftovers, probably because I’ve consumed my fare share of their avocado salsa beforehand. Seriously, their food and skinny spicy margaritas are amazing! Get there if you can. 

I came home from Superica on a mission. I wanted to recreate that amazing salsa myself because again, it totally checks off all the boxes for me. 

I love dipping a blue corn chip into it, but it would be wonderful over chicken, fish tacos, even dessert. (Just kidding) I just reaaaaaaaaally love it. 

 

You  know what’s even better?? It’s super healthy and is a great option as  a low carb  snack. I’ll be making a batch for us to enjoy at the beach this week. Did I mention it pares nicely with a skinny, spicy margarita???

Ingredients: 

1 1/2 ripe avocados

juice of 2 limes 

3-4 cloves of garlic

1 bunch cilantro (the size you get at the grocery store)

1 yellow or green bell pepper

1 white onion

6-7 tomatillos, peeled and quartered  

1 jalapeño peeled and seeded 

1/4 cup  almond milk 

salt and pepper to taste 

 

Directions:

Add all ingredients to a high speed blender and blend until smooth and creamy.
