My cravings are usually for salty/sour foods. I love lime, garlic, jalapeño and cilantro. So, when Walt and I went to Superica on a date a couple weeks ago, I was thrilled when they brought out their complimentary avocado salsa.
First, if you live in the Atlanta area, it’s 100% worth the drive and the wait to get a table there. Walt and I usually share the steak tacos or fajitas and always bring home leftovers, probably because I’ve consumed my fare share of their avocado salsa beforehand. I love dipping a blue corn chip into it, but it would be wonderful over chicken, fish tacos, even dessert. (Just kidding) I just reaaaaaaaaally love it.
You know what’s even better?? It’s super healthy and is a great option as a low carb snack. I’ll be making a batch for us to enjoy at the beach this week. Did I mention it pares nicely with a skinny, spicy margarita???

Ingredients:
1 1/2 ripe avocados
juice of 2 limes
3-4 cloves of garlic
1 bunch cilantro (the size you get at the grocery store)
1 yellow or green bell pepper
1 white onion
6-7 tomatillos, peeled and quartered
1 jalapeño peeled and seeded
1/4 cup almond milk
salt and pepper to taste
Directions:
Add all ingredients to a high speed blender and blend until smooth and creamy.
